Soy Chicken Stir-fry (Ayam Goreng Kicap)

Description of the Dish

I adapted this simple recipe from the chicken rice recipe that my friend, Kak Alif, taught me whilst we were at university together. She was known as the best cook amongst all the Malaysian students. Learning to cook from her was such a privilege and most of her recipes were simple, approachable and affordable which suited our student life very well. Preparation Instructions

  1. Mix the marinade ingredients in a bowl, then add the chicken strips and leave to marinate in a fridge for 30 minutes.
  2. Heat a griddle pan or frying pan over medium heat until it’s hot, then add the oil.
  3. Cook the marinated chicken for 3-4 minutes, lightly tossing until the chicken is cooked through and add the mangetout and any leftover marinade and cook for 2 minutes until the vegetables are slightly wilted.
  4. Turn off heat and transfer to a serving platter. Serve with jasmine rice.
