Strawberry Chia Seed Pudding

Strawberry Chia Seed Pudding

Description of the Dish

This nutritious breakfast pudding is topped with fruit preserves for a sweet and tangy combination that pairs wonderfully with the subtle vanilla undertones. While very small when dry, chia seeds expand drastically in liquid. Plan at least 30 minutes ahead when making this recipe to ensure enough time for them to expand. Alternatively, you can mix up this pudding and leave it in the refrigerator overnight. With just 2 tablespoons of chia seeds, this recipe packs nearly 10 grams of fiber, a good portion of the recommended daily amount. — Robin Fields, The Easy Three-Ingredient College Cookbook
