Description of the Dish

This omelette is a favourite dish for Malaysians. It’s not included on the menu at my restaurant, but whenever my fellow Malaysians visit, there is always a special request for it. This simple dish is served as an accompaniment to other main dishes. Two ingredients that are essential are the onion and chilli, but you can use additional ingredients if you like, such as chopped spring onions and sliced mushrooms. I like my omelette moderately spicy, but if you prefer yours very spicy, add some chopped bird’s-eye chillies. — Norman Musa, Amazing Malaysian

  1. Crack the eggs into a bowl and whisk gently with a fork. Add the onion, chilli, black pepper and salt and mix thoroughly. Heat the oil in a 25cm frying pan over a medium heat. When it is hot enough, pour the eggs gently into the pan and reduce the heat to low. Use a fork to spread out the chilli slices evenly. You can use a different size of frying pan, but the cooking time may be different – it will take longer using a smaller pan, and less time using a bigger one. Cover the frying pan with a lid or plate and cook for 2 minutes. Covering the pan makes the omelette cook more quickly and firms up the top. Flip over and cook for a further 2 minutes. Transfer to a plate, cut into 8 pieces, like a pizza, and serve.
