Quick Cauliflower & Broccoli Stir-fry (Sayur Goreng)

Description of the Dish

This is a very quick stir-fry that uses turmeric, soy sauce and chilli flakes for flavouring, but if you don’t like chilli flakes, you can add coarsely ground black pepper to give a bit of spicy heat to the vegetables. When frying vegetables like broccoli and cauliflower, turn the heat up high – it will cook the vegetables beautifully, keeping them crunchy inside. — Norman Musa, Amazing Malaysian

  1. Put the turmeric and soy sauce into a small bowl and mix with 50ml of water. Heat a wok or a large frying pan over a high heat. Add the oil and sauté the garlic until golden brown, then add the cauliflower, broccoli and carrots. Cook for 1 minute, then add the turmeric and soy mixture. Fry for 2 minutes, stirring once or twice, then scoop on to a serving platter and sprinkle chilli flakes on top. Serve straight away.
