Green Bean & Turmeric Stir-fry (Kacang Goreng Kunyit)

Description of the Dish

This is a quick vegetarian stir-fry that can be cooked in minutes, and you can add fresh prawns, crispy fried anchovies or dried shrimps if you like. You can use carrots, mangetout or asparagus as alternatives to beans. — Norman Musa, Amazing Malaysian

  1. Soak the beans in 500ml of cold water with a pinch of salt for 3 minutes to remove any dirt, then drain and set aside. Heat a wok or a large frying pan over a high heat. Add the oil and sauté the garlic and chilli until golden brown. Add the beans, salt and turmeric and fry for 2 minutes, until the beans are slightly wilted. Push the beans to one side and crack in the egg, stirring. Let it scramble, then mix with the beans. Cook for 1 minute, then transfer to a serving platter and serve straight away.
